Roast potatoes, is a Sunday really complete without them? Chefs and home cooks alike have been sharing their hacks to make them perfectly.

Mary Berry has shared her recipe for perfectly “crunchy” golden roast potatoes. Sam Stern, a professional chef and cookbook author, has said you can make the “best roast potatoes you’ll ever eat” in six simple steps.

Now another chef has detailed a secret ingredient he swears makes for the best roast potatoes. Chef Oli Brandon says the trick is to add a teaspoon of baking soda while they’re cooking.

In a video on his TikTok page, he bites into one of his freshly made spuds. He describes the satisfying crunch as: “The sound of the best roast potatoes you’ve ever had.”

In a step-by-step guide, Oli explains: “Put one teaspoon of baking soda and salt into boiling water and cook your potatoes until they’re fork tender but not falling apart.”

Adding baking soda at this stage breaks down the starch in the potatoes called pectin and draws it to the surface. This helps to create a crispy surface and gives the potatoes a lovely golden brown color.

Once the potatoes are fork tender, drain them off and fluff them up. Oli continues: “Next, finely chop rosemary and garlic and add into a pan with lots of olive oil.

“Toast these until lightly golden brown and then drain the oil off all over the potatoes.

“You’ll be left with an array of crunchy rosemary and garlic crumbs. Don’t throw them away we will be using it later,” says Oli.

Using the freshly drained oil, Oli spreads a coating over the top of the potatoes before they are baked.

“Make sure you spread that oil all over the potatoes, add salt and pepper, and then bake them at 350F for 20 minutes,” he said.

“Turn them over and bake them for another 20 to 30 minutes or until super crispy.”

Finally, transfer your roast pirates into a bowl and add the toasted garlic and rosemary crumbs. Oli recommends adding a pinch of salt at this point too, before mixing all of the ingredients together.
